I was wondering why we always choose rice as a staple over cous cous, when cous cous takes much less water, energy and time to cook, and takes up less space? I wanted to compare the two nutritionally so I picked 2 major brands and found that cous cous does better over all, not by a huge amount though.
It got me wondering why cous cous isn't the staple filler? Is it because rice lasts longer? I can't find anything online that gives a life span for cous cous.
(amounts are per 100g)

Thats a really good point, aside from the economical factor of cous cous being more expensive per calorie than rice, i cant think of a reason

Tagged for interest. I actually have never cooked with coucous, I've eaten it but never done it myself.

That would be lighter on fuel usage for my gas cooker than rice... I'll have to look into it. I'm repacking my backpack at the moment, just repacked 500g of rice in there, might switch it out for couscous

Would it be for similar reasons to why people choose white over brown rice? A higher fat content (more oils?) may mean it has a shorter shelf life. I am only guessing though

I'd be interested in the shelf life, otherwise couscous is easier too cook and is just as tasty.

from what i have been reading, it seems that couscous can be preserved in much the same way as rice, however the whole wheat cous cous goes rancid more readily because it still contains the bran from the wheat and therefore the oils.
Havent verified yet but it makes sense

rice is a grain. cous cous is made of wheat. I'll stick to rice. I need low gi so I will likely go with basmati long grain. TYVM

I have been thinking about alternatives to rice as well. I am considering polenta as it is made from cornmeal and is gluten free as I can't have cous cous. I'm going to look into shelf live over the coming days. Polenta can be made into a mash, a cake and even chips so it gives variety which is appalling....... Interested in any other thoughts

i have heard of people preserving polenta for quite a long time, it just reacts to water a lot worse than rice or wheat does, so you really need to make sure it is dry, maybe even put it throuhg a dehydrator for a few hours straight from the packet before sealing it away

I'm pretty sure there's a gluten free cous cous available now, but not sure of its exact make up.

I was wondering the same thing about couscous. It is much easier than rice to prepare. I tried a search on www.eatbydate.com/ but it doesn't have a listing for couscous.
