As some of you will know, I have an interest in determining the actual shelf life of well packaged food vs. what the wider prepper community says they are. In regards to oils the mantra is they have short half life and they go rancid. Extra virgin olive oil will may be last 2-3 years max but it will still turn
Well.........
I went to a dinner at a new local Italian restaurant and a I saw a sign for an olive oil tasting evening - to be far there was wine and aged cheese as well, but the olive oil caught my eye. I paid my money and enjoyed my evening....
there was a 20 year old olive oil and 14 year old one and several which were only a few years. I couldn't tell the difference - the newer ones were greener, but taste wise I couldn't tell.
Anyone up to speed here? Google says they go rancid and that they don't age like wine at all and have a limited shelf life of 1-2 years.
Interested in anyones knowledge of this.

Opened a couple of packs of Nobby's nuts a few months back. Both about 10y old. Usualy foil/mylar off-the-shelf packs. One in undamaged packaging was ok. One slightly crumpled pack was rancid.
As usual: avoid heat and oxygen. Oil in metal/glass ought to be ok, but in plastic, or once-opened, rotate it.

Any chance you can ask the owner of that restaurant how those aged oils were stored? I presume in corked glass bottles with tiny air pocket in the neck and the corks/bottle necks dipped in sealing wax? Keeping oxygen out must be critical?

In my experience full cream milk powder sealed in the original tin goes rancid within a year of the use-by date. This is exposed to hot conditions so longer life may be possible with cooler storage. I use sunflower oil for cooking and it seems to last forever. Opened plastic bottles last for at least two years past the use-by date and this includes regular exposure to temps in the 30s and 40s with no care taken except to click the lid closed!
'Conventional' wisdom says animal fats go off fairly quickly and veg oils last longer. But to my understanding lard will last either indefinitely or for a very long time. Shrugs!

We buy Canadian canola oil in a 20 liter plastic jug in a box. We repackage it into 1 liter recycled liquor bottles as they have good caps or corks. Then bring it to the kitchen as needed from the cold room..
It is best to discard, recycle the plastic jugs right away as they are not reusable.. Sun light will break them down in a short time..
Have never had any of the oil go off in any way..
