Yeah balance is where it's at.
It's not just protein but also vitamins and minerals which mostly come from veggies and fruits. Vitamin C is best obtained from citrus trees [1 tree provides HEAPS when mature] or sprouting grains such as wheat. I have no grinder but I have wheat because I intend to just sprout all of my wheat, and sure then you can crush it with a mortar and pestle and make a kind of bread if you really want to, though they taste just fine as a fresh salad mix or add to the mundane of rice and beans which I have plenty of.
My personal goal for this year is to balance out the veggies and fruits up to a similar level of the grains and starches that I have stored. I might have to dehydrate every second day for a year to do it *laughs* but I will have them up to par.
